Go Get That Donkey!
It was never a question of whether I was going to do it, it was more like, are you sure you should? Usually to the ring of, should you bring that baby squirrel home? There’s more than one? Do you really think that bird will survive with a broken wing? Do you need to save snakes too?
Obviously. Of course. And have you met me? I grew up in a cul de sac surrounded by thick, lush foliage, a fortress, our Narnia, the woods. And there was no shortage of animals falling out of trees, having a run-in with a predator or needing some assistance. And certainly, no shortage of me toting them home to fix them up. (You’re welcome Mom and Dad!)
There’s always going to be someone (maybe even your inner voice) that says, are you sure you should? Don’t listen. We’re only a few months into the new year, and I think it’s the perfect time to give those voices a good kick to the chins. Let’s look at our busy-selves and say, is there something I want to do, should do, but haven’t yet? And do them!
So when my girlfriend I’ve known since kindergarten called to discuss her latest idea, bringing home a donkey—I suggested two! I was very inspired. (And we’ve been getting each other into trouble for years.)
Hollie’s been adding animals to her little farm for awhile now and knew I would be supportive. (She helped me save more than one wild animal back in the day.) Her goal is to have a home where her kids and students, she’s a teacher, can learn how to love, care and live side-by-side with them. She’s a wonderful example of building a home you love and sharing that love with others.
And she got that donkey!

So, go get that donkey! It’s a new year, a new day and a new chance to say, let’s do this!
My donkey of 2017 is to blog. And I couldn’t be more happy to be sharing all my favorite cocktails, mocktails and more with you. And today deserves a donkey inspired drink.
Donkey Kick (My version of a Moscow Mule, it will give you a swift kick in the a#%. Go get those goals!)
4 oz Ginger Beer
2 oz Vodka
Squeeze of Fresh Lime
3-6 slices Fresh Jalapeno
Garnish with a sprig of Mint or a Lime
Pour vodka and lime into a mug (copper, if you have it). Add ice and top with ginger beer. Now, here comes the heat! Thinly slice fresh jalapeno and add 3 to 6 pieces to your mug, depending on your spice tolerance. Stir to combine. Garnish with a sprig of mint or lime.
Mocktail version: Ginger Beer is non-alcoholic and delicious. Garnish with a sprig of mint and lime and enjoy! (If you want to sweeten it a bit, add cranberry juice.)
I may just have a few more “donkeys” up my sleeve that I’ll be sharing over the next months…cliffhanger!
