Fourth of July Mini All-American Pie (and it’s Boozy!)

The words were like music to my ears. “We’ve got to get our hands on some fireworks.” This was followed by the rubbing together of his hands like all the evil characters you’ve seen in cartoons. Because this didn’t mean your average visit to the grocery store to pick up some sparklers with dad. This meant smuggling. This meant illegal. This meant crossing the border. This meant father-daughter bonding at its best! This meant mom was going to kill us. But this also meant that all the kids in the neighborhood were going to think we were heroes.

Get in, get out and drive home with explosives hidden in the trunk. What could be better? What could be more All-American than smuggling fireworks to celebrate your Independence Day?! ?

Pie! Pie is an All-American treat. So, in honor of smuggling fireworks on the Fourth, I’m making pie with a (hidden) punch.

Peering over the counter of the roadside firework stand (barely able to see), I would always choose the ones with the sweetest packaging and biggest bang. Roman Candles, Aerial Spinners, Missiles, Mines, Fountains and Black Cat everything. So, I’m going to make my packaging as “sweet” as possible, I’m making them mini! And you’d never guess what was hidden inside.

Let’s get started! I’ve greased and lined my extra-large cupcake tins with crust.

Mini pies are super fun to make because since you have six spots in your cupcake tin, you have several pie options, which is my favorite part. I like to make multiple fillings. I’ve chosen fresh blueberries, blackberries, strawberries and raspberries for my fruit.

And you can see I’ve tucked down the edges of my dough. Look at that filling! (Recipe below.)

I went crazy with the toppers and made stars, stripes, lattice and braids! (Go big or go home on the Fourth, right?!)

And now for the yummy, super secret filling. I added Bourbon!

Crust
Find a great homemade crust from my Midnight Blueberry Pie Recipe here, or just buy frozen and get a quick start!

Filling (for each mini pie)
1/2 cup Fresh Fruit
2 TBS Brown Sugar
2 tsp Granulated Sugar
1/4 tsp Vanilla Bean Seeds
1 TBS Flour
Splash of Bourbon! (Optional)
Squeeze of Orange or Lemon (Optional)

Bake at 350 for 20 minutes. Mini pies bake much quicker so keep an eye on them. Let it cool so the flavors set in and enjoy!

I’ve never even tried brown sugar in a pie before until now. What was I waiting for? It’s delicious! Add the bourbon, and you’ve got a boozy little bite

Apparently, Iowa just lifted their firework “prohibition.” But Dad and I still hide them when I’m home on the Fourth…just in case ? (And no one’s told mom they’re legal, we’ve got to keep her on her toes.) Happy Fourth of July! ??

What are your favorite fireworks?

Splish Splash!

Keep your heels, head and standards high and your home a happy one.
